Pizza Pad Krapao Gai
Continuing with a theme of Thai Fusion ideas this is an easy Thai taste pizza that we do at Amor and is popular with both foreign visitors and Thais. As most people do not have a pizza oven at home, this easy recipe uses a 6” pita bread as the base. At Amor we use our Napolitano pasta sauce, as the sauce, but you can use any good homemade or bott led, store bought, pasta tomato sauce in this recipe.
Pizza Pad Krapao Gai (Pizza with Stir Fried Chicken with Basil and Chili)
Ingredients:
1 pita bread, approximately 6 inches
200 grams skinless chicken breast, minced
3 cloves garlic, minced
10 birds-eye chilies (prik kee
noo), minced, (less if you don’t want the dish too spicy, this is a
very spicy dish)
1 tablespoon oyster sauce
½ tablespoon sugar
3-4 tablespoons good pasta tomato sauce
100 grams mozzarella, shredded
½ teaspoon parmesan, grated
¼ teaspoon dried oregano
1 handful Thai basil (bai krapao)
2 tablespoons soybean or vegetable oil
Preparation:
1. Heat oil in a wok
2. Add the minced garlic and chilies
3. Add the minced chicken and stir fry till the chicken is done, approximately 3 minutes
4. Add the oyster sauce and sugar
5. Add 2 tablespoons of the tomato sauce, reserve the other 2 tablespoons of sauce
6. Add the handful for basil, toss, and remove from the fi re immediately
7. Heat the oven to 200°
8. Put the pita bread on a rack in the oven to crisp, about 1-2 minutes
9. Spread the reserved 2 tablespoons of tomato sauce on the hot pita bread
10. Spread the chicken mixture over the tomato sauce
11. Cove the chicken mixture with the shredded mozzarella cheese
12. Sprinkle the parmesan cheese and oregano over the top
13. If you have a grill, put the pizza on a tray in the hot oven for 1-2 minutes for the cheese to melt
14. Then put under the grill for a further 5 minutes, till the cheese browns
15. If you don’t have a grill, put the pizza on a tray in the oven for 5-10 minutes, till the cheese browns
16. Cut into 8 slices and serve on a hot plate
